Ingredients:
300g pasta
200g cottage cheese
1 zucchini, chopped
1 red bell pepper, chopped
1 small onion, sliced
2 garlic cloves, minced
150ml milk
1 cup vegetable stock
100g grated mozzarella or cheddar
1 tbsp olive oil
Salt & black pepper, to taste
Fresh parsley, chopped
Instructions:
Cook pasta in salted water until just tender and drain.
Heat olive oil in a pan and sauté zucchini, pepper, and
onion with salt and pepper until soft.
Add garlic and cook 1 min until fragrant.
Stir in cottage cheese, milk, and vegetable stock.
Fold in pasta and vegetables and transfer to a baking
dish.
Top with grated cheese.
Bake at 190°C for 20 mins until bubbly and golden.
Finish with fresh parsley before serving.
