Mexican Shrimp Salad


Ingredients
Shrimp 450g
Romaine lettuce 200g
Lime juice 1 tbsp
Black beans 425g
Canned corn 1 cup
Red onion 2 tbsp
Cilantro 2 tbsp
Cucumber 1
Tomato 4
Avocado 1
Cheese 200g
Crushed red pepper


Boil the shrimp, peel, and separate. Toss the shrimp with salt, red pepper flakes, and lime juice.


Combine the cooked beans, canned corn, chopped cilantro, and salt. Squeeze in the lime juice.

 
In a large salad bowl, layer fresh torn lettuce, bean-corn mixture, sliced cucumber, tomato, avocado, and cheese.

Lay the shrimp as the final layer.

Serve with any sauce.
