Smoky Tomato & Halloumi Bake

 


Ingredients:

200g halloumi, cubed

1 onion, finely chopped

2 garlic cloves, minced

400g passata or crushed tomatoes

1 tsp smoked paprika

150ml cream or milk

½ cup vegetable stock

1 tbsp olive oil

Salt & pepper, to taste

Fresh parsley, chopped


Instructions:

Heat olive oil in a pan and fry halloumi until lightly

golden, then remove.

In the same pan sauté onion with salt and pepper until

soft.

Add garlic and smoked paprika and cook 1 min until

fragrant.

Stir in passata, cream or milk, and vegetable stock.

Simmer 5 mins until slightly thickened.

Transfer to a baking dish and top with halloumi.

Bake at 190°C for 20 mins until bubbling and lightly

golden.

Finish with fresh parsley before serving.
