Chanterelle Dumplings



Ingredients
For the dough:
1 egg
150 ml kefir
2.5 cups flour
Salt
Baking soda

For the filling:
3 cups chanterelles
1 onion
Vegetable oil
Salt
Ground black pepper

Lightly beat the egg with a fork, add salt, baking soda, and kefir, and mix. Pour 1.5 cups of flour into a deep bowl, make a well in the center, and pour in the kefir mixture.

Knead the dough. Add more flour if necessary. The dough should be elastic and not stick to your hands. Cover with a bowl and let it rest for about 20 minutes.

Rinse the chanterelles and finely chop. Chop the onion and fry in vegetable oil until translucent. Add the chanterelles and fry until tender. Season with salt and pepper to taste at the very end. Cool the filling.

Tear off small pieces of the kefir dough and roll them thinly with a rolling pin. Cut out circles with a cookie cutter.

Place a small amount of mushroom filling in the center of the circle and pinch tightly. Cook in boiling salted water for 5-7 minutes from the moment it comes to a boil.
