Chocolate Pistachio Cookies with Swirls of Color and Crunch 🍪🌈

 



Ingredients:


- 1 cup unsalted butter, softened 🧈

- 1 cup brown sugar 🟤

- 2 large eggs 🥚🥚

- 1 teaspoon vanilla extract 🌼

- 2¾ cups all-purpose flour 🌾

- ½ cup unsweetened cocoa powder 🍫

- 1 teaspoon baking soda 🥄

- ½ teaspoon salt 🧂

- 1 cup shelled pistachios, roughly chopped 🟢

- 1 cup white chocolate chips 🍥

- Optional: food coloring gels (like green, pink, or blue) 🌈


Directions:


Preheat your oven to 350°F (175°C) and line two baking

sheets with parchment paper. In a large mixing bowl,

cream together the softened butter, granulated sugar,

and brown sugar until light and fluffy. Beat in the eggs,

one at a time, followed by the vanilla extract. In a

separate bowl, whisk together the flour, cocoa powder,

baking soda, and salt. Gradually add the dry ingredients

to the wet ingredients, mixing until just combined. Gently

fold in the chopped pistachios and white chocolate

chips. If you're adding a swirl of color, divide the dough

into portions and add a few drops of food coloring to

each, mixing until the color is even. Combine the portions

back together, creating a marbled effect. Scoop

tablespoons of dough onto the prepared baking sheets,

spacing them about 2 inches apart. Bake for 10-12

minutes, or until the cookies are set but still soft in the

center. Allow them to cool on the baking sheet for 5

minutes before transferring them to a wire rack to cool

completely.
