Ingredients
🍗 2 chicken breasts, cut into bite-sized pieces
🍚 150 g jasmine rice
🥦 1½ cups broccoli florets
🍄 1 cup mushrooms, sliced
🧅 ½ onion, cut into chunks
🧄 2 garlic cloves, minced
🧴 1 tbsp vegetable oil
🥢 2 tbsp soy sauce
🍯 1 tsp honey
🌽 1 tsp cornstarch
💧 60 ml water
🧂 Salt and black pepper to taste
🌿 1 tbsp chopped parsley or green onions
Instructions
Cook the rice: Bring salted water to a boil and cook rice
for 10–12 minutes until fluffy. Drain and keep warm.
Cook the chicken: Heat oil in a wok or skillet over
medium-high heat. Add chicken and cook 5–6 minutes
until lightly browned and cooked through.
Add vegetables: Stir in mushrooms, onion, broccoli, and
garlic. Stir-fry 3–4 minutes until vegetables are tender but
still crisp.
Make the sauce: In a bowl mix soy sauce, honey,
cornstarch, and water until smooth.
Combine: Pour the sauce into the pan and cook 2–3
minutes until it thickens and coats the chicken and
vegetables.
Serve: Plate the rice and spoon the chicken and vegetable
stir-fry beside it. Sprinkle with herbs before serving.
