Ingredients
For the Main Component:
2 cups dark sweet cherries, pitted and halved
2 tbsp Kirsch (cherry brandy)
1 tbsp granulated sugar
1 tsp cornstarch
For the Secondary Component:
1 cup heavy whipping cream
2 tbsp powdered sugar
1/2 tsp vanilla extract
2 tbsp dark cocoa powder
For the Sauce / Layer / Topping:
4 oz dark chocolate (70% cocoa), finely chopped
1/4 cup heavy cream
1 tbsp unsalted butter
For Garnish (optional):
1 tbsp dark chocolate shavings
2 whole cherries with stems
Directions
Combine cherries, Kirsch, sugar, and cornstarch in a
small saucepan over medium heat.
Simmer for 5 to 7 minutes until the juices thicken into a
glossy syrup, then cool completely.
In a chilled bowl, beat 1 cup heavy cream with powdered
sugar and vanilla until stiff peaks form.
Gently fold the cocoa powder into the whipped cream
until no streaks remain.
Place the chopped dark chocolate and butter in a small
bowl.
Heat 1/4 cup heavy cream until steaming, pour over
chocolate, and whisk until smooth to create a ganache.
Layer the cooled cherry mixture into serving glasses,
followed by the chocolate whipped cream.
Pour a thin layer of warm ganache over the top and
finish with chocolate shavings.
