Ingredients
4 eggs
1 zucchini
100 g green peas
1 leek
1 clove garlic
2 tbsp Parmesan cheese
4 tbsp cheese
2 tbsp olive oil
Slice the zucchini thinly. Cut the leeks lengthwise, rinse, and finely chop. Chop the garlic.
Heat 1 tbsp oil in a small frying pan. Add the leeks and cook over low heat until soft. Add the zucchini, green peas, and garlic and cook for 10 minutes. Transfer to a bowl and let cool.
Lightly beat the eggs and cheese, add to the vegetables, and mix. Heat the remaining oil in a frying pan, add the egg and vegetable mixture, and cook over low heat until tender, about 15 minutes.
Place the pan in a preheated oven or under the grill and cook until golden brown. Remove, let rest for 5 minutes, cut into portions, and serve.
