Ingredients
12 Eggs
150g Sugar
100ml Soy Sauce
2 Onions
4 Cloves Garlic
2 Red Chili Peppers
1 Bunch Cilantro
Vegetable Oil
Peel and thinly slice the onion and garlic. Halve the peppers and remove the seeds. Cut the flesh into thin half-rings. Pour 5cm of oil into a saucepan and heat until very hot. Add the onion, garlic, and chili. Cook for 2 minutes, then transfer to paper towels.
Boil the eggs and fry them in the same oil for 3-4 minutes. Place them on paper towels, then cut each egg into quarters and arrange them on a plate. Combine the soy sauce and sugar in a saucepan and cook until the sugar is completely dissolved. Remove the cilantro leaves and mix with the fried onion, garlic, and chili. Add to the eggs and drizzle with the sauce.
