Mussels 2500 g
Butter 4 tbsp
Onion 1
Garlic 2 cloves
Tomatoes 3
White wine 1.5 cups
Vegetable oil 3
Chicken broth 1.5 cups
Leek 1
Salt 1 tsp
Pepper 1 tsp
Melt the butter in a large saucepan over medium heat. Add the vegetable oil. Add the chopped onion, leek (white part), and garlic. Sauté for about 5 minutes.
Add the diced tomatoes, salt, pepper, and white wine. Increase the heat and reduce the wine slightly (1-2 minutes), then add the chicken broth. Bring the contents of the saucepan to a boil.
Pour the mussels into the boiling broth and stir well. Cover and simmer over medium heat for 8-10 minutes, or until the mussels open. Serve hot.
