Greek Rice Burritos



Ingredients
Tortillas 4
Rice 2 cups
Feta cheese 3/4 cup
Cucumber 1
Tomato 1
Tzatziki sauce

For the filling:
Olive oil 1 tbsp
Onion 1/4 cup
Garlic 2 cloves
Tomato paste 1 tbsp
Ground lamb 500 g
Water 1/3 cup
Cinnamon 1/2 cup
Oregano 1/2 cup
Coriander 1/4 tsp
Clives 1/8 tsp

Heat a frying pan over medium heat. Sauté the onion in olive oil, add the garlic and tomato paste, and cook for about 2 minutes. Fry the ground lamb in this mixture, stirring. Drain any excess juices. Add water and spices, reduce heat, and simmer for about 10 minutes. Season with salt and pepper.

Place the tortillas on a plate and cover with a damp paper towel. Microwave for about 30 minutes until pliable. Top each tortilla with a little rice, ground meat, feta, thinly sliced cucumber and tomato, and spread with tzatziki sauce. Fold the edges in and roll the burritos tightly.
