Red Velvet Strawberry Cheesecake Recipe 🍰
Ingredients:
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 3 packages (8 oz each) cream cheese, softened
- 1 cup granulated sugar
- 1 cup sour cream
- 1/4 cup unsweetened cocoa powder
- 2 tablespoons red food coloring
- 4 large eggs
- 1 teaspoon vanilla extract
- 2 cups fresh strawberries, hulled and sliced
- 1/4 cup strawberry jam (for topping)
Directions:
1. Preheat your oven to 325°F (165°C). Grease a 9-inch
springform pan and line the bottom with parchment
paper.
2. In a medium bowl, mix the graham cracker crumbs
and melted butter until combined. Press the mixture
firmly into the bottom of the prepared pan to form the
crust. Bake for 10 minutes, then set aside to cool.
3. In a large mixing bowl, beat the cream cheese and
sugar until smooth and creamy. Add the sour cream,
cocoa powder, red food coloring, and vanilla extract,
mixing until well blended.
4. Add the eggs one at a time, beating on low speed after
each addition until just combined. Gently fold in 1 cup of
sliced strawberries.
5. Pour the batter over the cooled crust in the pan. Bake
for 50-60 minutes, or until the center is set but still
slightly jiggly. Turn off the oven and let the cheesecake
cool inside with the door ajar for 1 hour.
6. Remove from the oven and refrigerate for at least 4
hours or overnight. Before serving, top with the remaining
sliced strawberries and drizzle with strawberry jam.
