Waldorf Salad


Ingredients
Egg yolk 1
Lemon juice 2.5 tbsp
Rapeseed oil 125 ml
Cream 75 g
Salt
Pepper
Sugar
Celery (greens) 750 g
Green apples 4
Walnuts 75 g

In a tall bowl, combine the egg yolk and 1 teaspoon of lemon juice. Whisk until the consistency of mayonnaise, adding the vegetable oil drop by drop and then in a thin stream. Using a mixer fitted with a whisk attachment, beat the cream until medium-thick and gently fold it into the mayonnaise. Season with salt and pepper.

Peel the celery and cut into thin strips. Or, first slice thinly, then cut into strips. Immediately mix the celery with mayonnaise. Wash the apples, cut them into quarters, and remove the cores. Slice them or cut them into thin strips and immediately mix them with the celery before they darken.

Finely chop the nuts and add to the salad. Season with salt, pepper, and sugar to taste. Cover and let sit for about an hour. Then season again to taste.
