Ingredients
For the base:
Oreo cookies 140g
Butter 30g
For the cheesecake filling:
Cottage cheese 400g
White chocolate 200g
33% cream 150g
Oreo cookies 2 pcs
Instant gelatin 1 tbsp
Crush the cookies and butter in a blender until the mixture resembles wet sand. Press the mixture into the bottom of a springform pan or pastry ring. Refrigerate for 20 minutes.
Soak the gelatin in 4 tbsp of cold boiled water for the time indicated on the package. Place the cottage cheese, cream, and melted chocolate in a blender. Pulse until smooth and uniform.
Microwave the gelatin until dissolved and add to the cottage cheese. Whisk well again. Add the cookie crumbs, mix well, and spoon the mixture over the base.
Refrigerate for a few hours until the cheesecake is completely set. Carefully remove from the pan before serving. Garnish with whipped cream and strawberries, if desired.
