Ingredients
For the crust:
1 cup flour
1/4 cup powdered sugar
1/4 tsp salt
110 g butter
For the filling:
2/3 cup lime juice
1.2 cups sugar
1/4 cup flour
4 eggs
1/4 tsp lime zest
Green food coloring
Preheat oven to 350°F (175°C)
For the crust: Combine the powdered sugar, flour, and sea salt in a large bowl. Cut in the cold butter and mix with your fingers until it resembles wet sand.
Pour into a greased baking pan, pressing evenly with your fingers.
Bake for 20-25 minutes or until golden brown.
For the filling: Combine the sugar and flour in a bowl. Add the eggs one at a time, beating well after each addition. Add the lime zest and juice, and enough food coloring to create a nice green color (but not so much that the filling looks like a neon sign!) and beat until smooth.
Pour the filling onto the hot crust and return to the oven for another 20 minutes.
The filling should be set and not jiggle.
Cool completely in the baking pan and dust with powdered sugar before cutting.
