Ingredients
3 Pears
1 Cinnamon Stick
2 Cloves
Lemon Juice
3 Tbsp Sugar
80g Chocolate
1 Tsp Butter
50ml 20% Cream
Pour 2-3 cups of water into a saucepan, add the cloves, sugar, and cinnamon, and bring to a boil. Peel the pears, leaving the stems on, trim the bottoms to stabilize them, and carefully core them. Then drizzle with lemon juice.
Place the pears in the syrup on their sides and simmer over low heat for 10 minutes, turning them from side to side to prevent overcooking. Check with a toothpick. Once the pears are soft, transfer them to a plate, pat dry with a paper towel, and let cool.
In a saucepan, combine sugar (1 teaspoon), cream, and butter. Bring to a near-boiling point. Add the broken chocolate, stir until melted, and turn off the heat. Pour the warm sauce over the pears. Serve immediately.
