Ingredients
400 g condensed milk
80 g butter
200 g brown sugar
1/4 tsp vanilla
3/4 cup espresso
2 tbsp sugar syrup
180 g dark chocolate
dried fruit
Place the condensed milk, butter, sugar, salt, coffee, and syrup in a heavy saucepan. Stir constantly without bringing to a boil, and cook over low heat for about 5 minutes, or until the mixture becomes glossy and the sugar has dissolved. Now increase the heat to medium and, continuing to stir, bring the mixture to a boil. Cook, stirring vigorously, until the mixture thickens (another 6-8 minutes).
Remove the pan from the heat and immediately add the chocolate (in small pieces), nuts, and dried fruit. Stir quickly and vigorously until the chocolate melts. Then pour the mixture into a lightly greased parchment-lined pan. Cool the fudge for half an hour, then wrap the pan in plastic wrap and refrigerate.
