Ingredients
3 eggs
2 tablespoons sugar
1 tablespoon water
1 cup milk
200 g condensed milk
Whisk the eggs with the milk and condensed milk until smooth. In a saucepan, dissolve the sugar and water and cook over low heat until the sugar turns light brown.
Evenly spread the resulting caramel over the flan pan. For this dish, it's best to choose a round pan with high sides. Carefully pour the milk and egg mixture into the pan, being careful not to disturb the caramel layer.
Cover the pan tightly with foil, turning up the edges. Bring a large saucepan of water to a boil. Reduce the heat to medium, place the pan with the flan in the double boiler, and cook for 15 minutes. Remove from heat and let cool. Remove the foil, cover the pan with a plate, and invert.
