Lemon Sorbet



Ingredients
Sugar 200 g
Water 200 ml
Lemon Juice 200 ml
Lemon Zest
Cream 1 tbsp

Pour the sugar and water into a saucepan and bring to a boil. Once boiling, reduce the heat and let simmer for about 5 minutes. Once the liquid becomes clear and syrupy, remove from heat and let cool for about 15 minutes. Add the lemon zest and lemon juice.

Then add the cream. Taste the sorbet. Is it tart? Add sugar or a little more cream. It's very difficult to give a recipe that hits the spot. Everyone has different tastes. Lemons are different too.

Pour the liquid into the container. Place it in the freezer and leave it untouched for an hour. Check to see if it's starting to freeze and stir it thoroughly with a fork. Do this every hour for the next three hours, after which it's ready to eat. Don't be lazy, as stirring the sorbet will prevent large ice crystals, which are far from tasty.

You can store it for a couple of days, covered with plastic wrap. Don't store it longer, as the sorbet will begin to crystallize.
