Caramelized Mandarins



Ingredients
Sugar 1 cup
Orange liqueur 2 tbsp
Mandarins 12
Cinnamon 2 sticks
Pistachios 4 tbsp

Peel the mandarins and place in an ovenproof dish. Cut the zest of two mandarins into thin strips. Set aside.

Pour the sugar into a saucepan and heat slowly, stirring, until it dissolves and darkens. Pour in 300 ml of water and heat, stirring constantly, until the caramel is completely dissolved.

Add the chopped zest and cinnamon, and simmer for another 5 minutes. Remove from heat and pour in the orange liqueur, stirring. Let the syrup cool, then pour into the dish with the mandarins. Cover, let cool, and refrigerate for 5 hours. Sprinkle with pistachios before serving.
