Cottage Cheese Dessert with Mango



Ingredients
Gelatin 24 g
Egg Yolk 3
Sugar 120 g
Cottage Cheese 18% 150 g
Lemon Juice
Natural Yogurt 400 g
Cream 250 g
Mangoes 3

For the cottage cheese mixture, soak 18 g of gelatin. Whisk the egg yolks with sugar. Stir in the cottage cheese, lemon juice, and yogurt. Dissolve the squeezed gelatin, mix it with 2 tablespoons of the cottage cheese mixture, and stir it into the main cottage cheese mixture. Refrigerate. Once the cream begins to set, whisk and fold in the cream.

For the mango mixture, soak 6 g of gelatin. Peel the mango, cut the flesh from the pit into wedges, and cut into cubes. Puree 400g of mango cubes. Squeeze the gelatin, dissolve it, and mix it with 3 tablespoons of the puree. Stir it into the main puree.

Line a 1.5-liter baking dish with plastic wrap and layer the curd mixture, alternating with the mango. Then cover the dish with plastic wrap and refrigerate for 4 hours. Cut into portions before serving.
