Pineapple Dessert



Ingredients
Cottage cheese 200 g
Egg yolk 1
Egg white 2
Corn starch 1 tbsp
Vanilla 1/2 pod
Brown sugar 2 tbsp
Lemon zest
Canned pineapple 1 piece
Butter
Sugar

In a bowl, beat the yolk and sugar with a mixer until smooth, then add the cottage cheese, starch, zest of half a lemon, and vanilla seeds. Mix with a mixer until smooth.

In another bowl, beat the egg whites until stiff. Gently fold the egg whites into the cottage cheese mixture with a spoon and mix well, without using a mixer.

Grease a baking pan with butter and sprinkle with sugar. Place a pineapple disk on the bottom and the cottage cheese mixture on top. Place the casserole in a preheated oven at 180°C (350°F) for 30-40 minutes. The top should be nicely browned.

Remove the finished casserole from the oven and let it rest for 10 minutes, then carefully invert it onto a plate, pineapple-side up, being careful not to damage the edges.

To caramelize the pineapple, heat 20g of butter in a frying pan, drop in the pineapple wedges, drizzle with lemon juice, and sprinkle with dark brown sugar. Fry the wedges for a few minutes on each side over high heat.
Once the pineapple has cooled slightly, you can sprinkle it with powdered sugar.
