Ingredients
Rice 200 g
Chicken 1000 g
Red Beans in Their Own Juice 400 g
Tomato 400 g
Red Chili Pepper 1
White Wine Vinegar 60 ml
Olive Oil 3 tbsp
Green Onion 4 stalks
Salt to taste
Pepper to taste
Boil the rice until tender. Transfer to a baking sheet or tray and cool.
While the rice is cooking, remove the chicken from the bones and cut into pieces.
Cut the tomatoes in half crosswise, remove the seeds, and cut the flesh into strips.
Finely chop the pepper and green onion.
Place the cooled rice, chicken, beans, tomatoes, chopped peppers and onions, cumin, oil, and vinegar in a salad bowl. Season with salt and pepper to taste.
