Red Cabbage Salad with Feta

 


Ingredients

400 g red cabbage

1/5 cup walnuts

1/4 cup olive oil

1/4 cup wine vinegar

2 tsp mustard powder

1/4 tsp ground black pepper

1/2 cup feta cheese

1/4 cup raisins


Heat the walnuts in a dry frying pan over low heat. When fragrant, add the olive oil, wine vinegar, mustard, and pepper. Whisk with a fork for 30 minutes, then simmer for another 1.5-2 minutes.


Pour the sauce over the cabbage, add the feta cheese and raisins, and mix well.


 Let the salad sit at room temperature for 15 to 60 minutes, stirring occasionally to ensure the cabbage is infused with the flavor of the dressing.


Serve the salad warm (at room temperature) or chilled, garnished with fresh herbs.
