Ingredients
1/2 cup low-fat cottage cheese
1/4 cup green bell pepper
2 tomatoes
1 tbsp green onion
Salt to taste
Ground black pepper to taste
Seed the tomatoes and finely chop. Transfer to a bowl. Add the cottage cheese, finely chopped bell pepper, and onion. Season with salt and pepper to taste. This salad is great stuffed into tomatoes, peppers, or served on endive leaves.
