Ingredients
Potatoes 900g
Cherry tomatoes 20
Celery (stalks) 5
Capers 4 tbsp
Red onion 1
Olives 15
Fresh basil
For the marinade:
Olive oil 4 tbsp
Lemon 1
Sea salt to taste
Pepper to taste
Boil the peeled potatoes in salted water. Cool. Mix the olive oil, lemon juice, salt, and pepper. Add tomatoes, chopped celery, capers, chopped onion, and olives. Chop the potatoes coarsely and add to the vegetables. Season with the marinade and sprinkle with fresh basil.
Tip: Small new potatoes are ideal for the salad. Boil them unpeeled.
