Mediterranean Lentil and Millet Salad



Ingredients
Lentils 1 cup
Wine vinegar 3 tbsp
Water 300 ml
Millet 1 cup
Salt 1/2 tsp
Olive oil 1/4 cup
Garlic 1 clove
Mint 1/2 cup
Arugula 1 bunch
Cherry tomatoes 150 g
Feta cheese 110 g

Boil the lentils in water for 15-20 minutes. Mix the hot lentils with olive oil, season with salt and pepper. Let the lentils cool. Cook the millet in salted water. Mix the lentils, cooked millet, and tomatoes in a bowl, and tear the arugula by hand. Press the garlic, pour in 2 tablespoons of vinegar, 3 tablespoons of olive oil, salt, and pepper. Dress the salad. Sprinkle with feta cheese.
