Ingredients
3 tablespoons olive oil
1 tablespoon balsamic vinegar
1 tablespoon lemon juice
1/2 teaspoon ground black pepper
4 peaches
6 tomatoes
1 cup cherry tomatoes
2 celery stalks
1/4 cup mint
Make the dressing: combine the oil, vinegar, lemon juice, 1/2 teaspoon salt, and 1/4 teaspoon salt. Cut the peaches in half, remove the pits, and quarter each half. Cut the tomatoes into slices about 1 cm thick. Arrange the peaches, tomatoes, cherry tomatoes, and celery on a serving platter.
Sprinkle with the remaining salt (1/4 teaspoon). Sprinkle with chopped mint leaves and drizzle with the dressing.
Add a few sprigs of mint for garnish.
Use whatever herbs you have on hand; basil and parsley are excellent, as is thyme in the photo. Salt and pepper to taste. Use whatever tomatoes and peaches or nectarines you have on hand; cherry tomatoes are especially delicious.
