Ingredients
for the dough:
2 cups flour
190 g kefir
1/2 tsp salt
1/2 tsp baking soda
For the filling:
200 g Russian cheese
100 g mozzarella cheese
100 g cottage cheese
Italian herbs
Mix the flour, kefir, salt, and baking soda. Knead the dough. If it turns out too dry, just add a little more kefir. The dough should be dense and fairly dry, like regular dough.
Divide the dough into portions. Roll the dough into two flatbreads. Make the filling. Chop the cheese and cottage cheese. Mix the ingredients and add seasoning (optional). Spread the filling in an even layer on one circle of dough.
Fold the second circle over the top and pinch the edges. Place the flatbread on a preheated frying pan. Fry for 5-7 minutes (until golden brown).
Carefully flip the flatbread. This will require either the help of another person, or sleight of hand and no cheating. Fry for another 5-7 minutes.
