Ingredients
for the dough:
2 eggs
0.5 tsp salt
6 tbsp olive oil
2 cups flour
For the filling:
1000 g potatoes
1 cup rice
2 cups 4% milk
3/4 cup olive oil
0.5 tsp nutmeg
0.5 tsp mint
Salt to taste
Patatopita is a Greek pie filled with regular potatoes and rice.
Crack one egg into a bowl, beat with salt and 3 tbsp olive oil, then add flour and knead into an elastic dough. Roll it into a ball, cover with a napkin, and let rest for 15-20 minutes.
Wash, peel, and boil the potatoes until tender (about 20 minutes). Drain. Rinse the rice, boil for 7-10 minutes, and drain in a colander. Heat the milk. Pour the hot milk over the potatoes and mash thoroughly. Add the rice, olive oil, nutmeg, and mint, and season with salt and pepper to taste.
Grease a round baking pan with 2 tablespoons of olive oil. Roll the dough into a large circle and place it in the pan, allowing the edges to hang slightly over the top.
Add the filling. Fold the excess dough inward. Beat the remaining egg with 1 tablespoon of butter and brush the pie with it. Preheat the oven to 180°C and bake the patatopita for 30-40 minutes.
