Ingredients
For the dough:
Flour 120 g
Dry yeast 1/2 tsp
Water 65 ml
Olive oil 1 tbsp
Salt 1 pinch
For the filling:
Tomato 1
Smoked sausage 150 g
Cheese 100 g
Green onions 4 stalks
Onions 2
Ketchup to taste
Sift the flour into a wide bowl, add the yeast. Then pour in the water and knead until the dough is slightly sticky. Cover with a towel and let it rest for half an hour. After the time has elapsed, pour in the oil and salt. Begin kneading, even though the dough will be greasy. After 2 minutes, add another 1-2 tbsp. flour and, after punching down the dough, set it in a warm place, covered with a towel, for an hour.
For the filling, cut the sausage into thin slices, the tomato a little thicker. Cut the onion into rings, chop the green onion, and grate the cheese on a fine grater. After an hour, punch down the dough again, adding more flour if necessary.
Place the dough on parchment paper cut to fit the baking sheet. Using a rolling pin, roll the dough into a circle about 4 mm thick (the pizza will be quite small, about 20-22 cm in diameter).
Spread the dough with ketchup or sauce, arrange the filling, leaving a border: sausage and tomato, top with onion rings, and sprinkle with herbs. Sprinkle with cheese. Bake at 180-200°C for about 25 minutes (depending on your oven). The finished pizza will be golden brown and the cheese will be crisp.
