Chocolate Pancake Cake with Amaretto



Ingredients
6 eggs
1 cup flour
1/2 cup heavy cream
1/2 tsp vanilla
1 cup milk
1/8 tsp salt
1/4 cup powdered sugar

For the filling:
1.3 cups heavy cream
3 tbsp cocoa powder
3 tbsp sugar
1 tsp almond extract
2 tbsp Amaretto liqueur

For the frosting:
250 g dark chocolate
200 g heavy cream
2 tbsp Amaretto liqueur

Mix the dough ingredients in a blender. The consistency should resemble heavy cream. Pour 1/4 cup of the batter into a heated frying pan with oil and fry on one side only.

Filling: Beat the cream in the bowl of a mixer on high speed. Gradually add the sugar. The mixture should thicken. Add the cocoa powder, amaretto, and almond extract. Whip the mixture until it forms soft peaks.

Filling: Heat the cream in a saucepan over low heat and bring to a simmer. Break the chocolate into small pieces and pour it into the hot cream. Stir until the chocolate is completely melted. Add the amaretto and mix until smooth.

Spread each layer first with the chocolate cream, then with the filling. Arrange the cake in this manner, and cover the entire surface with the remaining chocolate cream. Chill before serving.
