Black Forest Cake



Ingredients
for the crust:
Flour 270 g
Eggs 6
Baking soda 2 tsp
Butter 200 g
Sugar 300 g
Cocoa powder 6 tsp

For the frosting:
33% cream 800 g
Cherries 500 g

For the soaking:
Cherry syrup 50 g
Vodka 50 g

Whisk the eggs with the sugar. Add the flour, baking powder, and cocoa (sifted through a sieve). Add the melted butter. Mix well. Divide the dough into two parts. Bake two cakes, one thin and one standard.

Cool the cakes and cut the standard cake lengthwise into two pieces so that the cakes are the same size. Soak the cake layers with vodka and cherry syrup (i.e., drizzle it).

Whip the cream with sugar. Reserve some cream and a few cherries for garnishing the top of the cake. Combine the whipped cream and cherries. Spread the cream over each cake layer. Pipe the remaining cream onto the top layer (you can use a pastry bag). Decorate the cake with the cherries and grated chocolate.
