Light Lemon Cakes


Ingredients
Butter 200g
Sugar 150g
Vanilla sugar 1 packet
Salt
Eggs 3
Lemons 2
Flour 250g
Baking powder 2 tsp
Icing sugar 150g

Preheat oven to 200°C (400°F). Beat the butter until stiff, gradually adding granulated sugar, vanilla sugar, salt, and eggs. Wash and dry one lemon, grate the zest, and squeeze out the juice. Add the juice and zest to the sugar-cream mixture. Mix the flour with the baking powder, sift it over the butter mixture, and mix thoroughly.

Grease a baking sheet with butter, fill it with the batter, smooth it out, and bake in the oven for about 20 minutes. Remove the pie from the oven. Squeeze the second lemon and mix it with powdered sugar. While the pie is still warm, spread the glaze over it. Cool completely, cut into slices, and serve.
