Ingredients
Cookies 1/2 cup
Mascarpone cheese 250 ml
Icing sugar 1/4 cup
Whipping cream 2 tbsp
Vanilla extract
Strawberry jam
To make the cheesecake, you'll need 4 wide-mouthed jars. Line the bottom of each jar with graham cracker crumbs in an even layer.
In a small bowl, beat the cream cheese, sugar, cream, and vanilla with a mixer until smooth and fluffy. Add a generous dollop of frosting to each jar, and top with another layer of cookie crumbs.
Top with a dollop of jam, then another dollop of the cream cheese mixture, gently spreading it over the surface. Garnish with a sprig of mint to complete the arrangement. Or simply screw the lids on the jars and refrigerate until completely consumed.
