Ingredients
5 eggs
3.5 tsp ground coffee
300 g sugar
1 cup flour
1/2 tbsp butter
200 g berries
For the frosting:
4 egg yolks
125 g powdered sugar
1 cup milk
2 tsp starch
1 tsp sugar
Pour coffee into a coffee pot, add 1.5 cups water, bring to a boil, and immediately remove from heat. Let sit for 3-5 minutes, strain. Pour out half a cup, add sugar, and stir until completely dissolved. Save the remaining coffee for the frosting.
Separate the egg whites from the yolks. Beat the whites until stiff. Continue whisking, then pour in the hot coffee. Add the yolks and flour, and mix thoroughly.
Preheat oven to 180°C. Grease a baking pan with butter and line it with parchment paper. Pour in the prepared mixture and bake for 35 minutes. Cool the cake layer and cut it into 3 layers.
Cream: Whisk the powdered sugar with the egg yolks. Pour in a glass of coffee and milk and heat over low heat, stirring constantly. Strain.
Add starch dissolved in 2 tablespoons of milk and sugar to the cream. Let cool, then spread the cream over the cake layers. Stack them on top of each other and garnish with berries. Refrigerate the cake before serving.
