French Chocolate Cake



Ingredients
Flour 2.5 cups
Sugar 3/4 cup
Dark chocolate 280 g
Butter 100 g
Vanillin 2 tsp
Eggs 5
Pinch of salt
Icing sugar
Berries 500 g
Sugar 1/2 cup
Lemon juice

Place the berries (optional) in a saucepan with 1/2 cup of sugar and heat, stirring occasionally with a wooden spatula. When the mixture begins to boil, continue heating for another 10 minutes. Transfer the mixture to a blender and puree. Cool completely, then squeeze in the lemon juice.

Grease a cake pan with butter and sprinkle with sugar. Set aside 3 tablespoons of sugar. Place the chocolate, butter, and remaining sugar in a saucepan and cook over low heat until the chocolate and butter are melted and the sugar has dissolved.

Remove from heat. Add vanilla and stir until smooth. Let cool. Beat the yolks and flour alternately into the chocolate mixture. Whisk the egg whites in a clean bowl. Season with salt and continue whisking until fluffy. Add the remaining 3 tablespoons of sugar and whisk again.

First, fold 1/3 of the beaten egg whites into the chocolate batter, then fold in the rest of the egg whites once combined. Pour the batter into the prepared cake pan. Preheat the oven to 325°F (165°C). Bake for 35-45 minutes (if the cake rises unevenly, turn it over after 20-25 minutes). Remove the cake from the pan, dust with powdered sugar, and serve with fruit sauce.
