Chocolate Cake



Ingredients
2 cups flour
2 tsp baking soda
1/2 tsp salt
110 g butter
220 g sugar
200 g brown sugar
3 eggs
220 g sour cream
1 tbsp vanilla
110 g chocolate
1 cup coffee
pistachios
cocoa powder

For the glaze:
3 cups powdered sugar
110 g butter
150 g sour cream
95 g cocoa powder
A pinch of salt
1 tsp vanilla

Preheat the oven to 140°C. Grease a baking pan and dust it with flour. Mix the flour with the baking soda and salt. In a mixer bowl, beat the butter and sugar until light yellow and fluffy. Beat in one egg at a time, then add the sour cream and vanilla.

At medium speed, add the melted chocolate and coffee. Finally, fold in the dry flour mixture in two batches. Bake for 30 minutes. Check for doneness with a toothpick.

Pour the sifted powdered sugar into the mixer bowl. Beat with the softened butter until fluffy. Add the sour cream, cocoa, a pinch of salt, and vanilla. Mix until smooth. Taste and add more powdered sugar if needed.

Smother the baked cake layer with the glaze. Sprinkle ground pistachios on top and dust with cocoa powder, if desired.
