Cinnamon Buns



Ingredients
Flour 250 g
Dry yeast 5 g
Sugar 80 g
Milk 150 ml
Egg 1
Butter 60 g
Cardamom 1 tsp
Salt 1 pinch

For the filling:
Butter 30 g
Sugar 1 tbsp
Cinnamon 1 tbsp

Crack the egg into a bowl and whisk. You'll only need half for the dough; save the rest for brushing the buns.

Dissolve the yeast in a few tablespoons of warm milk and let it sit for about 10 minutes, until the mixture doubles in volume. Melt the butter and let it cool slightly for a minute. Pour all the milk and the dissolved yeast into the melted butter. Add sugar, then half an egg, salt, ground cardamom, and flour. Knead the dough and let it rise for 30-40 minutes.

Then dust the work surface with flour and knead the dough lightly until it is soft and very manageable. Roll the dough into a rectangle.

For the filling, melt the butter and sugar, add cinnamon. Using a pastry brush, brush the mixture onto the dough. Carefully roll the dough into a log. Cut it into pieces, transfer them to a baking sheet, cover with a napkin, and let rise for 1 hour.

Dip a pastry brush in the remaining half of the egg and brush the buns. Bake at 230 degrees Celsius for about 8 minutes. Cover the finished buns with a towel and let cool slightly.
