Ingredients
2 shallots
4 tbsp butter
500 g asparagus
1/4 cup flour
3 cups chicken broth
4 cups heavy cream
4 cups spinach
Salt
Pepper
Bacon
Olive oil
In a saucepan, sauté the chopped onion in butter for about 2-3 minutes. Add the chopped asparagus and cook until tender, about 4-5 minutes.
Pour in the flour for 1-2 minutes and stir. Pour in the broth, cream, and milk. Stir until smooth. Bring to a boil and add the chopped spinach. Season to taste. Serve with crispy bacon. Drizzle with olive oil.
