Ingredients
4 Potatoes
Onion
Greens
4 Cucumbers
300g Boiled Sausage
3 Eggs
Kvass
Salt
Pepper
Pre-boil the potatoes in their skins and hard-boil the eggs. Peel the cooled potatoes and cut into small cubes. Finely chop the eggs. Dice the fresh cucumbers. Cut the cooked sausage into similar cubes. Very, very finely chop the onion, previously scalded with boiling water.
Chop the greens and mix everything together. If you have radishes, add them to the okroshka as well. Unfortunately, I didn't have any on hand; they add a little spice. The okroshka is ready.
Before serving, season the okroshka with pepper, pour in some cold kvass, add salt, and top with a dollop of sour cream per serving.
