Redcurrant Pie



Ingredients
200 g flour
100 g butter
190 g sugar
3 eggs
350 g red currants

Mix flour with 60 g sugar. Cut the butter into cubes and add to the flour. Add the yolks and knead the dough. Roll into a ball and refrigerate for at least 30 minutes. Place the chilled dough in a baking pan and prick with a fork. Bake for 25 minutes at 200 degrees Celsius.

Rinse and dry the red currants. Beat the egg whites with sugar until stiff peaks form: first on low speed, then increase the speed and gradually add the sugar (use room temperature egg whites in a grease-free bowl). Pour the currants into the prepared cake base and cover with the whipped egg whites. Bake for 40 minutes at 150 degrees Celsius. C. You can leave it to cool in the oven.
