Ingredients
1 onion
2 tbsp sunflower oil
5 cloves garlic
2 carrots
2 potatoes
4 cups vegetable broth
1 bunch parsley
8 sprigs thyme
2 bay leaves
1 cup green beans
3 cups spinach
Salt
Pepper
Finely chop the onion. Chop the carrots and potatoes. Heat the oil and fry the onion for 2 minutes. Add the wine and finely chopped garlic. Cook for 4 minutes. Add the carrots and simmer for 1 minute.
Add the potatoes and broth. Add the parsley, thyme, and bay leaf. Season with salt and pepper. Cover, bring to a boil, and simmer for 15 minutes. Add the green beans and spinach and simmer for another 5 minutes.
