Ingredients
Flour 250 g
Butter 100 g
Sugar 50 g
Water 10 ml
Apples 6
Almonds 70 g
Raisins 80 g
Egg 1
Egg yolk 1
Vegetable oil 3 tbsp
Breadcrumbs 30 g
Cinnamon 1/4 tsp
Milk 2 tbsp
Lemon juice
Salt
Sift the flour, add a spoonful of vegetable oil, the egg, a pinch of salt, and water. Knead the dough. Divide the dough into two parts. Add another spoonful of vegetable oil to one part. Combine with the other part and knead well.
Roll the dough into a ball, flatten it with your hand, and drizzle with the remaining oil. Cover with a bowl, plate, or lid and let rest for half an hour.
Meanwhile, prepare the filling. Cut the apples into slices and sprinkle with lemon juice. This prevents them from browning. Chop the almonds. Pour boiling water over the raisins and soak them briefly. You can simply rinse them with boiling water.
Dust a large cotton towel with flour and roll out the dough as thinly as possible. Roll it out as thinly as you can; the result depends on this.
Preheat the oven to 220°C (425°F). Grease the dough with half the butter and sprinkle with breadcrumbs (crumbs, sponge cake, or oats), leaving a 10 cm wide strip along one edge of the dough.
Evenly arrange the apples, raisins, and almonds on the breadcrumbs. Sprinkle with a mixture of sugar and cinnamon, add a couple of small knobs of butter. Brush the unfilled strip with yolk and milk. Using a towel, roll the strudel into a "sausage."
Place seam-side down on parchment paper or a baking sheet greased and floured. Brush with the remaining yolk and milk and bake for 40 minutes. During baking, brush the strudel 2-3 more times with yolk and milk.
