Flour 260 g
Salt 1/4 tsp
Cheddar Cheese 110 g
Butter 150 g
Water 6 tbsp
Apple 500 g
Lemon Juice 1 tbsp
Sugar 25 g
Cinnamon 1 tsp
Clives 1/8 tsp
Nutmeg 1/2 tsp
Cream 35%
Mix the flour and salt. Grate the cheese and cream the butter with the flour, salt, and cheese. Gradually pour the water into the bowl (1 tablespoon at a time) until the dough comes together. Knead. Wrap the dough in plastic wrap and chill in the refrigerator for at least an hour.
Meanwhile, prepare the filling. Peel and cut the apples into small squares. Sprinkle the apples with sugar, cinnamon, cloves, lemon juice, and nutmeg.
Preheat the oven to 230 degrees Celsius (450 degrees Fahrenheit). Remove the dough from the oven, roll it out, and cut out small circles. Place the filling in the center of each circle and seal tightly to prevent leakage. Make 3 small slits in the top of the pie with a knife. Return the pie to the refrigerator for a couple of minutes if the dough has become too soft.
Before baking, brush the pie with cream and sprinkle with sugar. Bake for 5 minutes at 230 degrees Celsius (450 degrees Fahrenheit), then reduce the temperature to 180 degrees Celsius (350 degrees Fahrenheit) and continue baking for 15 minutes or more, until golden brown.
