Ingredients
Chickpeas 1 cup
Red beans 1/4 cup
Green peas 1/4 cup
Ham 200 g
Onion 1
Carrot 1
Celery (stalks) 1
Water 2000 ml
Vegetable oil 2 tbsp
Salt
Pepper
Soak the chickpeas in cold water for 4-5 hours (or overnight), adding a little baking soda. Drain. Boil the peas until half-cooked and drain into a separate container.
In a separate saucepan, sauté finely chopped onion, celery, and carrot in vegetable oil. Add the chopped ham, frozen beans, and peas. After 5 minutes, add the chickpeas.
Add the reserved cooking water and simmer, covered, until tender. The soup should be quite thick.
If you can't find chickpeas, try making this soup with regular dried peas.
