Porcini Mushroom Soup



Ingredients
500 g porcini mushrooms
1 leek
2 carrots
Chinese cabbage
Soy sauce
Sherry
Vegetable oil
Salt
Spices

Clean, wash, and slice the mushrooms. Cover with water and bring to a boil, skim off any foam.
Peel and slice the carrots. Chop the white part of the onion and fry with the carrots in vegetable oil.

Add the sautéed vegetables to the soup, season with salt, and add spices as desired. Chop a few cabbage leaves and add to the soup. Cook for another 3 minutes. Add the soy sauce, and if you like, add a little sherry. Serve with sour cream.
