Ingredients
for the dough:
2 tbsp oat bran
100 ml 1.5% milk
1 tbsp natural yogurt
1 tbsp 1% cottage cheese
1 tsp corn starch
1 egg
1/2 tsp baking powder
1 tsp olive oil
Salt to taste
Stevia to taste
For the filling:
100 ml 1.5% milk
1 tsp corn starch
3 tbsp poppy seeds
Stevia to taste
Grind the bran into flour. Blend all the dough ingredients in a blender. Wait a little while for the bran to swell.
Bake in a non-stick frying pan over low-medium heat on both sides. Makes 2 large pancakes.
Mix all the filling ingredients and cook over low heat, stirring, until thickened. Once done, spoon the filling into the pancake, roll it into tubes, and cut into portions.
