Ingredients
for the burger:
1 eggplant
1 zucchini
1 red bell pepper
1 red onion
100 g lettuce
2 garlic
Thyme to taste
1 tbsp olive oil
4 round buns
For the sauce:
3 red bell peppers
1 tbsp olive oil
1/2 white onion
1/2 chives
0.5 bunch parsley
Soy sauce to taste
Tabasco sauce to taste
Bake the peppers in an oven preheated to 190-200°C until the skins darken and can be easily separated from the peppers.
Peel and seed the roasted peppers. Puree the pulp in a blender along with the onion and herbs. Add soy sauce, olive oil, and Tabasco.
Slice the eggplant, zucchini, red pepper, and onion into 1-cm-thick slices. Grill the vegetables in a grill pan while simultaneously preheating the oven to 180°C.
Grease a baking sheet with a little olive oil, place the grilled vegetables and thinly sliced garlic cloves on it. Season with thyme and bake for a few minutes in the oven.
Slather the buns and vegetables with the prepared creamy dressing and assemble the burger.
