Ingredients
Sugar 1.5 cups
Eggs 4
Vegetable oil 1 tbsp
Whole-wheat flour 4 cups
Baking soda 1.5 tsp
Dried fruit 1 cup
Nuts 1 cup
Milk 1 cup
Lemon zest 1 tbsp
Whisk the eggs with sugar until foamy. Pour the vegetable oil into the mixture in a thin stream, whisking continuously. Chop the dried fruit into small pieces.
Whisk the whole-wheat flour, baking soda, dried fruit, nuts (chopped or whole), grated lemon zest, and milk until smooth. Place the dough in a greased and floured or breadcrumb-dusted pan. Bake the cake for 65–75 minutes. Serve chilled, cut into portions.
